Thyme honey is well-known as a treatment for coughing fits and pain in the throat. Thyme honey can stimulate digestion and can have an antiseptic effect on gastrointestinal and urinary tract infections. What’s more thyme honey can help in lessening flu-like infections and bronchitis-like symptoms.
In early summer bees collect colza (rapeseed) nectar from the rapeseed fields in areas such as the Belgian Ardennes. The honey is neutral in taste and is white because of its rapid crystallization. Rapeseed or colza honey is very good in lessening respiratory infections such as colds.
Linden honey is collected by the bees at the beginning of summer from the blossom of linden or line trees. The honey has a delightful golden colour and has a very slightly minty taste. In linden honey too the crystallization process is slow.
Clover honey comes from white clover. Asa result of its rapid crystallization the honey in the pot is always white. The taste has a caramel-like sweetness, something that almost everyone likes. As a result clover honey is also known as ‘children’s honey’. An advantage of clover honey is in buttery consistency which means it does not run off the bread so quickly.
Wildflower or multifloral honey never has exactly the same taste or colour, because it comes from a mixture of different trees and flowers. This also has to do with the season in which the honey is made. Wildflower honey usually has a neutral taste and so is ideal to add to tea or yoghurt.
A honey that has very special characteristics and is almost unknown, otherwise known as the tea-tree oil honey.
Manuka honey is a single flower honey from the Leptospermum scoparium, which is a shrub or small tree found in both New Zealand and South-East Australia. The Leptospermum or “Manuka” or “Tea tree” can be found all over New Zealand but especially along the east coast of both North Island and South Island. In Australia it can be found in Tasmania, Victoria and New South Wales. Manuka is the name used in New Zealand, while ‘tea tree’ is common in Australia and less so also in New Zealand. The name arose after Captain Cook used the leaves to make ‘tea’.
The honey which the bees make from the nectar of the flowers has a unique taste, and is much darker and rich than clover honey. What makes Manuka honey special is its strong antibacterial and fungicidal effects.
The best quality Manuka honey with the strongest antibacterial characteristics comes from beehives placed in pristine nature where there is an abundance of Manuka bushes.
